This is a marvelous design for a pan! If one could only choose one, in addition to a fine skillet, this would be the one to buy, because it is wide enough, deep enough, responsive enough, heavy enough, to do just about anything. I have started and finished soups, done small stir-fries, sauteed, prepared greens, and made stew in it. I love that the bottom edge is rounded so food doesn't hide in an angle, and that the lip is curved, too, so pouring is clean and dripless. Mine is only 3 quarts, but for one or two persons, this is an advantage. I ordered it with a lid, which extends its usefulness. I clean the inside and outside both with "Barkeeper's Friend" and a soft nylon scrubber. If I'm feeling ambitious, I'll use copper polish. I don't mind the upkeep because the functionality of the pan makes it worth it. And there's no law that says you have to polish it at all! It is heavy and expensive, but Mauviel makes such fine quality cookware that I have acquired several different pieces and haven't been disappointed by any of them. Highly recommended.

All-Clad Copper Core 2-Quart Saucier Pan with Lid

Up until now all-clad's excellent heat conductivity has been a result of an aluminum core. Another metal equally efficient when it comes to conducting heat is copper. all-clad now has a complete line of copper core stainless steel cookware which uses bonded 5-ply construction to achieve culinary perfection. The copper core is exposed in an attractive band around each piece, adding warmth, color, and authenticity. Unlike pans with an abundance of exposed copper, these pieces clean easily and are lined with durable food-safe stainless steel. Use the saucier for sauteing enough scallops and veggies for a smallish family meal and for reducing and deglazing. Its curved sides facilitate quick stirring and whisking techniques.

I don't know how this copper core line performs better than the other All Clad lines - I got this because of the flared lip along the rim and you know what, no more dripping from now on!

I am not sure why All Clad doesn't make the flared lip available in the other All Clad lines.


with the conductivity of a copper, aluminum core and the craftsmanship of all-clad this pan is excellent.


Performs just as well as its 1-quart cousin, only the rivets are more proportionate and don't get in the way of your stirring. This thing gets hot fast, and that heat carries all the way up the sides, so you need to make sure you keep them scraped down (anything left stuck to them during cooking, including oil, will bake right on and become very difficult to remove without harsh abrasives that can damage the finish) and always use a towel or pot holder when grabbing for the lid--it will be nearly as hot as the pan itself.

I think anyone who makes candies or custards should own this thing. The evenness of heating is tough to beat and that smooth slope on the bottom makes getting your stirring implement down into those corners a trivial task.


I have had this pan for almost a year now and I have been very impressed with its performance. It was my first piece of All Clad and I bought it because I wanted a copper pan with the maintenance ease of stainless steel. I was a bit skeptical that it would have the same temperature response that a regular copper pan has, but I'm pleased to report that it does. I can take liquids from a roiling boil down to a non-boil and back again literally instantaneously by turning the burner knob (I have a gas stove) -- the pan is that responsive. Also, the heat is conducted uniformly all the way up the sides -- you can put your finger along the top edge of the exposed copper sandwich and feel the heat transferred immediately when you turn on the burner. Since it is so responsive, you generally need to use a lower heat setting than with a regular aluminum/stainless pan or food will burn. This pan is a joy to cook with -- the shape is like a flat bottomed mixing bowl and is great for rice pilaf, lentils, and small sautes. It is well balanced and light weight enough to do real saute cooking where you toss and flip the ingredients in the pan -- and the higher sides prevent the food from inadvertently escaping. It is relatively easy to clean, although rice and lentils will leave a residue which requires Bar Keepers Friend cleanser to completely remove. Also, the exposed copper will become tarnished from heat and steam, but it is easy to clean with the cleanser. Overall, I am extremely pleased with this purchase and would recommend the Copper Core line to anyone wanting the performance of copper cookware.

Farberware Specialties 1-Quart Open Saucier

I purchased the 14 pc set at Kohls and was very excited at first. It seemed to cook really well. After using a few times the nonstick coating is coming off. I have only used plastic utensils and have not cooked on high. I plan on returning them to the store.


Design of this pot is excellent but the nonstick comes off easily(very soft). Did the makers ever test their product?
I treat my cookware very well and use the proper utensils.
Dont even try a metal utensil. Shame on Farberware.

This is not a saucier. This is a stock pot with a shallow radius between the bottom and the vertical sides.

But is is a great pan! Even heating, easier upkeep than the Cuisinart and light too.

I find that a little Bartender's Friend works well on the exterior.


This is my first time to own a Calphalon tri ply copper cookware. I have collection of All Clad stainles steel and Calphalon tri ply stainless steel. I decided to try this cookware and after few days of cooking, I was impressed by its durability and evenly heating and there's no hot spots. Cleaning is just as easy. Make sure get yourself that radiance cleanser to clean the exterior of the pan. This is a fine cookware if you're looking for an average price pan that's also work as a dutch oven.


I bought it recently and was impressed by its even heating capabilities. I have own both All Clad and Calphalon tri ply stainless steel cookware and this saucier is my new addition to my collection. This is my first time to try copperware and I did not experience any problems. I like the subtly brushed exterior finish and this saucier will also work as a dutch oven. Highly recommended!!
